Amaranth Muffins (makes 15 small muffins)
adapted from this recipe.
dry ingredients:
1 cup whole wheat flour
2/3 cup cooked amaranth (made from 1/4 cup raw, cooked with 3/4 cup water according to package instructions)
1/3 cup brown rice flour
3 Tbsp, ground flax seed
1/3 cup wheat bran
2 Tbsp. corn starch
1 tsp. baking soda
1/2 tsp. baking powder
1 package vanilla sugar (use one tsp. vanilla extract instead)
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup chopped dates
wet ingredients:
1 Tbsp. organic cold pressed sunflower seed oil
1 cup apple sauce
1/3 cup maple syrup
Preheat oven to 180°C/350°F, grease muffin pans.
Combine dry ingredients in a bowl, mix in apple sauce, maple syrup and oil. Do not overmix. Spoon in muffin tins and bake for 18-20 minutes or until golden brown.
I love the idea of carpooling: apparently they have that too in the States. I always get a bit iffy thinking about having complete strangers along for the ride, but hey.
your muffins look absolutely droolworthy! I’ve never had amaranth myself, shame on me. and oh, sorry about the concert. will they do a replacement concert or did they just reimburse the tickets?
Interesting how different our cultural ‘food stuffs’ are. I’ve never had amaranth either. What type of flavor does it impart?

I love that so often your recipes have “stories” attached about why you made a particular thing, the occasion for it, etc. I also love that you then share pictures from your trips. Your muffins look great!
My friend carpooled to Belgium while we were living in Heidelberg and had a great time (and saved a lot of money). These muffins look “koestlich.” I’ll have to check the store for amaranth the next time I’m there.

How awesome about the carpooling. THat kind of thing just doesn’t happen here in Houston. Everyone is so dependent on their cars (myself included, it’s shameful). The city was not built with public transport in mind. There is talk of extending our miniscule metro rail… maybe someday.
I have some amaranth in my pantry!! I tried eating it like quinoa once and wasn’t too fond of it. I’ll have to try this out!

These muffins prompted me to get some amaranth flour at the store, but now I realize you used unground amaranth–oh well, they look so good I’ll just have to try them both ways.

Mmmm, amaranth muffins sound so good. And, as usual, Germany is ahead of us when it comes to environmental wisdom. Larger cities have car-sharing programs, but nothing big or country-wide…

Wonder if you can put another recipe for amaranth on here. I have had much trouble finding any recipes for this wonderful grain. And I am brand new to the world of shopping/eating organic. (3 months!) So I don’t know where else to find a recipe. The muffins look scrumptuous, but I cannot have gluten.
