Walnut Brittle Filled Confections

For these I made a soft version of brittle, which is gooey. It contains a mixture of toasted walnuts and soft caramel.
100g chopped walnuts (1 cup)
50g good quality margarine
5 tablespoons brown sugar
4 tablespoons soy milk or nut milk
1 teaspoon arrowroot powder
75g powdered sugar (3/4 cup sifted)
Heat a pan over medium heat and toast the chopped nuts for 5 minutes, until browned.
In a saucepan, melt the margarine
Add sugar and stir
Mix milk and arrowroot and add to melted margarine and sugar. Stir constantly until sugar is melted and mixture is boiling. Then remove from heat immediately and add powdered sugar. Refrigerate for at least an hour.
The method for these sweets is the same as for the coconut confectioneries, but if you want you can omit the “chocolate bottoms”, roll the brittle into balls and then dip it into the chocolate and cover completely with chocolate. Put on some parchment paper and let cool.
