Vegan MoFo Calcium Soup

Right now I am sitting at my desk and am happy that I don’t have to go out today. We have our first snow. But it is the wrong kind of snow, the one which comes way too early and is paired with rain, mud, and darkness. In my opinion, the best food against darkness is a thick soup to warm my belly. If this soup has potatoes as an ingredient, it is even better. This soup is “enriched” by leeks and turnip greens, both vegetables which will boost your calcium intake. It is simple but tasty and gets most of its flavour from dried tarragon, which is the perfect herb to accompany potatoes, if you ask me.

Potato Soup with Leeks and Turnip Greens

1 T olive oil
440 g (1 lb) potatoes, peeled and chopped
1 leek, chopped
3 cloves garlic, minced
4 cups vegetable broth
1 T tarragon
1 T fresh oregano
salt/pepper to taste
turnip greens from 3 turnips, cut into fine strips

Heat the oil in a large pot. Add chopped leek and sauté for 5 minutes. Add garlic, stir, and add remaining ingredients except for the turnip greens. Cook for 30 minutes. Let cool down a bit and purée the soup with a handheld blender for a couple of seconds. I always leave 1/3 of the potato bits intact, for a chunkier soup. Bring back to a boil, add turnip greens and cook for 1-2 minutes, until the greens have wilted. Serve with bread. (I served mine with a 100% spelt sourdough I had made a couple of days before.)

    It sounds delicious. I believe it'll be at least a month before we can start making hot steamy soups, it's still too warn here even in the evenings, but I'll definitely keep that recipe for colder days.

  9. I am a soup lover, and this one sounds absolutely delicious! Turnip greens? Interesting! I’ve never eaten them. Come to think of it, I’ve never had the opportunity to do so, as the greens are usually cut off the turnips before they reach the market. Maybe I’ll be lucky enough to have them on the turnips I’m hoping to get in my CSA basket!
