Place the soy chunks in a bowl and add boiling broth.
Cover and let sit for an hour to soak.
Meanwhile peel and cut the potatoes into bitesized cubes.
Place on a baking sheet and sprinkle with 1 tsp olive oil and salt.
Mix with your fingers and place in cold oven.
Heat the oven to 200°C and bake the potatoes until crispy, for about 20 minutes.
Cut onion and bell pepper.
Heat 1 tbsp olive oil in a large pot and add onion and pepper.
Fry for about 5 minutes and add reamining ingredients.
Add soy chunks plus leftover broth.
Add ½ cup water and cook over medium heat, for about 20 minutes.
Add more water for a thinner soup.
Serve immediately.
